Blue cheese dressing … I’m chuckling as I write this because honestly it’s not something I actually thought I would ever need to make. That is, until I came back from living a few years in upstate New York to realize that Blue Cheese Dressing is really not a “thing” out here on the west coast. I mean here we have Ranch, all day every day.
Don’t get me wrong, Ranch is great; I grew up on Ranch dressing – put it on salads, drizzle it on pizza, dunk French fries in it…
But in the time I lived in western NY where Buffalo wings are king, Blue Cheese is the default dip you get, never Ranch, it’s not ever a question. A request for Ranch would have garnered confused looks and quite possibly secret ridicule by the wait staff. While I never really noticed the absence of Ranch in upstate NY, I certainly noticed the absence of good Blue Cheese when we came back west. My husband will never get used to being given Ranch with Buffalo wings.
So here we are. Now I have to make Blue Cheese dressing to keep the family happy š And so here is a Blue Cheese dressing recipe that has gotten the New Yorker approval š
Blue Cheese Dressing
Ingredients
- 1/3 cup mayonnaise
- 1/3 cup plain Greek yogurt or buttermilk
- 1/3 cup crumbled blue cheese, see notes
- 2 tsp lemon juice, or to taste
- 1/2 tsp pepper
How I Make It
- Combine all ingredients and let chill 30 minutes for best result.
Notes
- Amount of blue cheese is based on preference, and also what type of blue cheese you use. Some blue cheeses are stronger than others, some saltier than others, etc. So adjust the amount based on your taste and the type of blue cheese you are using.Ā
