Garlic, butter, oil … mmmMMMM … now that doesn’t suck at all. This dish is one of the all time favorites requested at any dinner party at my house. I often make this as a side to something else like eggplant parm, chicken parm, grilled chicken, or any seafood would go nicely with this. The next day I end up eating this by itself for lunch.

Be warned though, this is not diet food. It’s “go big or go home” food. I mean, it’s pasta or noodle dressed in oil and butter. It’s neither Keto-friendly nor low carb-friendly. What a conundrum. Oh and the garlic – I use a copious amount of it in this dish. You have to make it worthy of its name, after all. I get my sous chef (husband) to mince a pile of it, so there’s basically no work on my part needed. Win! It’s so dang good and addictive, I really hope you try it . Everyone knows that diets start on Mondays anyway 🙂

Ingredients

  • 1 pound dry spaghetti, or any other noodle you like
  • ¼ cup garlic, finely minced
  • cup olive oil
  • 5 tbsp butter
  • 1 tbsp oyster sauce
  • 1 tbsp chicken stock powder
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 1/2 cup parmesan

How I Make It

  • Cook noodle or pasta per package instructions.
  • Heat the oil and butter in a large pan. The pan should be large enough to hold all the pasta you are cooking. Keep this on low to med-low heat and make sure the butter doesn't turn brown or burn.
  • Add all of the garlic, and let the garlic gently sauté in the oil/butter. Keep the heat low and make sure the garlic does not get any color or burn. You are infusing the oil and butter with all that garlic goodness so be patient and don't rush this process. Let the oil/butter and garlic gently mingle for about 3-5 minutes.
  • Add all the remaining ingredients except the parmesan.
  • Add the cooked pasta/noodle into the sauce and mix well. You may need to do this in batches to ensure even sauce coating. I am too lazy (and impatient) though, so I normally just dump all the pasta in and do my best to mix it through.
  • Add the parmesan and toss it through the pasta/noodle.
  • Top with more parmesan if you like! Sssshhhhh no one is looking.
